Prebiotic
Prebiotics are types of fibre that feed the good bacteria in your gut, helping them flourish. Tastemakers, garlic and onions are inulin-rich (gut bacteria promoting fibre). Bananas are a brilliant source of resistant starch which fuels microbes. Asparagus and leeks are loaded with prebiotic fibre to keep your microbiome happy.
Fibre
Fibre supports digestion and promotes a diverse gut microbiome. Legumes are digestion heroes. Add lentils, chickpeas, and beans to meals, or make them the star of the show. Whole grains such as oats, quinoa, and brown rice support bacteria diversity. Beautiful berries and apples contain pectin which is a type of good bacteria feeding fibre.
Fermented
Probiotic-rich fermented foods are rich in beneficial bacteria that make your gut (and tastebuds!) happy. Sauerkraut and kimchi–both made with cabbage–make a tasty addition to a summer salad, and are particularly good in a sandwich. The humble pickle also falls into this category, provided it is naturally fermented. Yogurt and kefir contain live cultures. Miso and tempeh are fermented soy products.

Breakfast
Darjeeling is favoured by the team for a morning tipple, as it is the most tea-forward of our range. Çılbır (Turkish Eggs) is made with a garlicky-spiced yogurt base, poached eggs, and a spiced butter. Add a side of sourdough, a cold bottle of Darjeeling, and some sun coming through the window, and you have the perfect Sunday morning breakfast.
Lunch
Harissa chickpea stew works well with dark and smoky Yunnan. The chickpeas are cooked with harissa, garlic, and tomatoes. We like to serve with brown rice, and stir through some yogurt at the end. You can pack it with veg for additional plant points.
Aperitivo
We thoroughly enjoy the Italian tradition of a pre-dinner drink and snack to open the stomach. Garlicky smashed beans on sourdough as light bites is a particular favourite. Pair with our champagne-like Oolong, and some Kalamata olives on the side.
Dinner
Our light Sencha Green is delicate and floral and pairs well with a Friday night favourite… Risotto with asparagus and leeks. Garlicky, caramelised chopped asparagus and thinly sliced leeks are added to a silky, saucy risotto.
