What is Kombucha?

Kombucha is a naturally fermented tea made from sweetened tea and a symbiotic culture of bacteria and yeast, commonly known as a SCOBY. During fermentation, the SCOBY consumes the sugar in the tea, producing beneficial organic acids, healthy bacteria, and an effervescence that makes kombucha so refreshing. The sugar is ‘eaten’ by the SCOBY during fermentation, kombucha is naturally low in sugar. Adding sweeteners tips a healthy product into being an ultra processed food and one that will not support gut health. 

You’re looking for a liquid that has a tang, Left Field is naturally savoury, but the culture has been developed to remove the overbearing vinegaryness sometimes found in kombucha. Some brands add vinegar to artificially create the tang. Check the label! 

If you see sediment in the bottle, or even a jelly-type substance (it’s called a pellicle), this points to kombucha having all the good stuff left behind. 

Other Ways to Support Your Gut Health 

🌿 Aim for 30 plants per week. Easy ways to incorporate include lentils and beans instead of meat, mixed leaves rather than solo spinach, or pair your kombucha with some spiced nuts and seeds, or crudites with hummus.
